These muffins are very easy to make and I'm sure your kids will love them. It will take you 15 minutes for preparation and 15 minutes for cooking.
Ingredients:
- ½ cups Butter, Softened
- 1 cup Sugar
- 2 whole Eggs
- 1 cup Mashed Ripe Bananas
- ⅔ cups Peanut Butter
- 1 Tablespoon Milk
- 1 teaspoon Vanilla
- 2 cups Flour
- 1 teaspoon Baking Soda
- ½ teaspoons Salt
- ¾ cups Miniature Chocolate Chips
Preparation:
Preheat oven to 350 F. Grease your mini muffin pans and set aside. Recipe makes roughly 4 dozen mini muffins.
In a large bowl using an electric mixer, cream butter and sugar until light and fluffy, about 3 minutes. Add eggs, one at a time, beating well after each addition. Beat in the bananas, peanut butter, milk and vanilla until well combined.
In a medium sized bowl combine the flour, baking soda and salt then add it into the creamed mixture just until moistened. Fold in chips.
Fill greased mini muffin tins three-fourths full. Bake at 350 F for 14-16 minutes or until a toothpick inserted near the center comes out clean. Cool for 5 minutes before removing from the pans to wire racks.
