Mimosa friut cups

Ingredients:
  • 1/4 cup (50 mL) sugar 
  • 1 tsp (5 mL) grated orange peel 
  • 1 cup (250 mL) fresh orange juice 
  • 1 large orange, peeled, cut into bite-size pieces
  • 1 large red apple, cut into bite-size pieces
  • 1 large pear, cut into bite-size pieces
  • 1 cup (250 mL) seedless green grapes 
  • 1 large banana, sliced
  • 1 1/2 cups (375 mL) champagne or sparkling white grape juice 

Preparation:

             In large bowl, stir sugar, orange peel and orange juice until sugar is dissolved. Gently stir in orange, apple, pear and grapes until coated. Cover; refrigerate at least 1 hour or overnight.
             Just before serving, stir in banana and champagne. Spoon about 3/4 cup fruit with juice into each of 8 footed dessert cups.
